Tom Otterness (b. 1952 in Witchita Kansas) is an American sculptor whose works adorn parks, plazas, subway stations, libraries, courthouses and museums in New York---most notably in Rockefeller Park in Battery City Park and in the 14th street/ 8th Avenue subway station---and other cities around the world. He was the first artist ever to have contributed a balloon to the Macy's Thanksgiving Day Parade. "...he made a giant Humpty Dumpty suspended in an upside-down tumble, as though he might have jumped from one of the swanky Central Park West rooftops..."

His style is often described as cartoonish and cheerful but tends to carry a political punch. His sculptures are filled with multiple meanings and allude to sex, class, money and race. These sculptures depict, among other things, huge pennies, pudgy characters in business suits with moneybag heads, helmeted workers holding giant tools, and an alligator crawling out from under a sewer cover. The main theme of his work seems to be the struggle of the little man against the capitalist machine in a difficult and strange city. His aesthetic can be seen as a riff on "capital realism" and blends high and low, cute and cutting.

VIETNAMESE SPRING ROLLS

A Vietnamese Spring Roll is finger food which is wrapped in rice paper. Goi Cuon (Spring Roll) is usually made from shrimp with rice vermicelli, lettuce, mint, cilantro, and carrots. It is served cold along with a sauce made from Hoisin sauce, garlic, peanuts, and water or Nuoc Cham liquid. One of the main differences between Spring Rolls and Egg Rolls is an egg roll is fried and spring rolls are made with cooked meats and seafood along with fresh vegitables.

How to make Vietnamese Spring Rolls:
From an Asian market buy rice paper (Banh Trang), rice vermicelli, and chirashi chilli garlic sauce.

For the Rolls
6 sheets rice paper
2 large leaves of green lettuce, cut into small pieces
3 ounces rice vermicelli, cooked
1/2 cup cilantro, chopped
12 mint leaves
1/2 carrot, (julienne)
9 shrimp, cooked, peeled, deveined and cut in-half

For the Sauces
1 tablespoons fish sauce
3 tablespoons warm water
1 1/2 tablespoons fresh lime juice
3/4 clove garlic, minced
1 1/4 tablespoons white sugar
1/3 teaspoon garlic chili sauce (Chirashi)
2 3/4 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts

Rolls:
    • Bring some water to a boil.
    • Boil rice vermicelli for 3 to 5 minutes or until al dente, drain.
    • Dip the rice paper in a large bowl of warm water so it will become soft
    Place the rice paper on a flat area, then place 3 haft shrimps, a small amount of lettuce, cilantro, 2 mint leaves, carrot slivers and noodles at the bottom edge of the circle.
  • Fold the right and left sides of the rice paper circle in towards the middle.
  • Make the final package by rolling from the bottom and seal the roll with a touch of warm water.
  • Sauces: 
  • In a small bowl combine:  fish sauce, water, lime juice, garlic, sugar and chili sauce together. 
  • In another bowl combine:  hoisin sauce, peanuts, and chilli sauce. 
  • Serve the rolls with these two dipping sauces.
