Pancakes - No Wheat Flour, Low Carbs & Gluten Free - For Christmas Morning or Anytime!

No Wheat Flour
1/4th the Carbs!
Gluten Free!
Anytime Pancakes

I never order pancakes while eating breakfast out and seldom at home, because the idea of major carb loading just turns me off. Recently, I set out to invent a lower carb pancake, which turns out to also be gluten free, and I am very happy with the results! These are delicious pancakes that even flour loving pancake eaters will enjoy - they have 1/4th the CARBS and are GLUTEN FREE!

Ingredients
2 cups almond flour
2 eggs separated, whites whipped until frothy
3/4 cups buttermilk
1 tsp salt
3 tablespoons melted butter
1/2 tsp baking soda
- vegetable oil for pan (1 tsp for each 4 pancakes)
(forms a thick batter, add a little buttermilk, if batter thickens)

Directions
- mix the flour, baking soda and salt  together
- make a well in center 
- separate the eggs, keep both yolk & white
- add egg yolks & buttermilk to dry ingredients, stir
- add 3 tablespoons melted butter, mix in
- start heat under pan, add 1 tsp oil
- beat the egg white until frothy
- fold the egg whites into mixture
- Cook 4 pancakes at a time (add 1 tsp oil for each batch)
- When you spoon the batter into the pan, gently spread to form a 3" round
- Turn the pancakes when bottoms are brown, the batter will never bubble, & the top half will still be unset
- Cook 30 seconds more on other side after the flip, watch carefully not to burn and do not press down on the cooked side of the pancakes or they will lose their fluff and become more dense

Serve while warm with your choice of topping 
(tastes great with melted butter & cheat just a little with the delcious carbs of real maple syrup)
