FOOD
Vichyssoise light

Famous for good reasons, vichyssoise is easy to make and excellent for a variety of occasions, served hot as well as cold. It also makes a pretty but simple presentation, when snippets of green chives are on top. This version uses non-fat skim milk, made rich by homemade chicken stock.

Ingredients:
1 teaspoon unsalted butter
3 medium leeks (white part only), chopped
1 small onion, chopped
1 large baking potato, peeled and coarsely chopped
1 quart rich, home-made Chicken Stock
1/2 cup nonfat skim milk
Fresh ground white pepper to taste 
Garnish: 1 tablespoon chopped fresh chives

Directions:
Melt the butter over low heat in a 3-quart nonstick saucepan, add the leeks, onion, and potato, and sauté gently for 2 minutes (do not allow the vegetables to brown). Add the chicken stock and bring to a boil. Reduce the heat and simmer, covered, for 20 to 30 minutes or until the vegetables are very tender. Puree the soup in several batches in a blender. Let cool, then refrigerate until cold. Just before serving, stir in the cold skim milk. Taste for seasoning and add salt and pepper to taste. Pour Vichyssoise into chilled bowls and garnish with chopped chives.
